We had a short run on Monday and my foot was thankful. The pain is radiating into my ankle from the ball and arch. I have another appointment with a doctor on Thursday. I remain hopeful that he will figure out what the problem is!
After running around our small town in the morning, I went to my dad’s to make peanut butter granola. We are both peanut butter fanatics.
- Step 1: Combine 4 tbsp. peanut butter and 4 tbsp. honey in a bowl and microwave until peanut butter melts (approximately 30 seconds). Stir. Add ½ tsp. cinnamon and ½ tsp. vanilla extract in to the peanut butter mixture.
(Fun Fact: My dad loves to wear old, thin t-shirts with holes. He will not throw them out 🙂 )
- Step 2: Add 2 cups of oats and stir until oats are completely covered in peanut butter mixture. Spread out oat mixture onto prepared cookie sheet and bake for 7 – 8 minutes @350 degrees until granola is slightly browned.
- Step3: Let cool until granola is crunchy. (Our granola never really got crunchy?!?!?!)
I’m still searching for an easy, yummy, CRUNCHY granola recipe. This one is uncomplicated and delicious but not crunchy like I envisioned. Any recipes out there?
