Our garden is in full production. (It’s actually the hubs’ garden) He planted everything and continues to water and tend to it. We have tons of spinach, mustard greens, broccoli, cauliflower, carrots, romaine lettuce, cabbage, and turnips.
I am starting to get creative with spinach and mustard green dishes. We are cooking them almost every night. After my long run Saturday, I created a post-run spinach smoothie. It ended up really tasting great.
Post-Run Spinach Smoothie
- 2 cups of ice
- 1 cup almond milk
- 1 banana
- 1 small square of dark chocolate (86% Cacao)
- 2 cups of fresh spinach (packed tight)
It was an ideal way to recover.
